I shared most of my secrets on the Peanut Butter Pie... but not all of them. If I didn't get the recipe from the newspaper, I think I would market it.

Anyway, try this one!

1 cup pom/cherry juice
1/2 cup honey
Seasonings to taste- Italian seasoning, garlic, salt and pepper

I made this marinade for chicken and it is wonderful. I marinated 2 leg/thigh combinations and 1 chicken breast. Bake the chicken in the oven @ 400 degrees for 45 minutes. The skin was black but not burned and the chicken has a reddish color because of the pom juice. I found the recipe to make a glaze for a store bought rotisserie chicken with the pom juice and honey. I was having a friend over that only eats all organic and I took organic chicken (very expensive!) and marinated it with this. My friend really enjoyed it. I made a salad and had organic garlic and parsley angel hair pasta sauted in garlic and of course butter. It was great. She really enjoyed the noodles too.

The Peanut Butter Pie

This is really really easy.

4 oz cream cheese, softened 1 9" graham cracker pie crust
1 cup confectioners' sugar 1/4 cup chopped peanuts, optional
1/2 cup peanut butter 1/4 cup granulated chocolate, optional
1/4 cup milk
1 9 oz package whipped topping

Whip cream cheese until soft and fluffy. Add suage and peanut buter. Slowly add milk and whipped topping. Pur into pie shell. Sprinkle with nuts and chocolate, and freez until firm, at least 3 hours. Thaw 10 minutes before serving. Serves 8.

Hints:
1/2 of the time I leave out the confectioners' sugar ( I usually forget to add it). Most of the time the peanut butter is 1 cup. I always use the chunky Peter Pan peanut butter. I only used the milk the first time I made it. I don't see where the milk makes a difference. I usually make 2 pies at 1 time so I use the largest cool whip I can get. As far as the garnish is concerned. I use chocolate toffee chips (like the one's for ice cream topping), chocolate chips, M&Ms or Reese Pieces. Anything chocolate, peanut butter or chocolate and peanut butter works for a garnish. It is great even without the garnish.

My turn

Everyone else started a blog and I finally got a chance to. I started with my pet's blog. I just wanted to see how to do it. I started Spanky's blog (spankydoodle-missy) because I thought it was cute. Then I got a little carried away. So, as my friend Pam suggested, I am now starting one about myself.

I am a single mom. My daughter, Grace is a student at Crown College of the Bible in Powell, TN. She turned 20 on Friday. She is not a baby anymore. She will be going to England with the college choir in March. I am soo proud of her.

I am a work at home mom. By that I mean, the company I work for set my office up in my house. I usually work in the mornings until 2 pm and that leaves my afternoons free. That helps me be a better neighbor and a church member.

When my pastor's wife was sick and one of my other neighbor's, Mrs. Todd was sick, my pastor's wife called me the nurse of Orient Street. I even got the chance to go to the hospital when my friend Sally was operated on.

One of the best things that ever happened to me was the day I started going to my church, Smyrna Baptist. We are a very small church (by the number of people) but we have the strongest spirit of the Lord. Our church has grown so much this year. Growth isn't always measured in numbers, but sometimes in spirit. God has greater plans than we could ever imagine for our church. I am so excited to see what will happen.

Right now, I am reading "Strenghen thy brethren" by Clarence Sexton. When my father was alive, we got to hear Clarence Sexton, Bruce Turner and Jack Riffe (my pastor) and my father enjoyed hearing all of them. This is a study of I Peter. I haven't gotten too far, but so far it is exactly what I need to get through "times like these".

I make the world's best peanut butter pie. People as far as Venezuela have eaten my peanut butter pie. I was told to keep it away because they ate so much. I'll share some of my favorite recipes one day.

Right now, I am raising my puppy, Spanky. He has been a light in my life right now. I suffer from empty nest syndrome. That means I live alone. For the first time in my life, I only have to answer to God and myself. It is really weird cooking for one. Coming home and leaving when ever I want to. One day, I will get used to it.
